Chicken Fried Rice
It’s a quick ,easy and a tasty dish which can be prepared in less than 30 minutes.You can add any choice of vegetables you like and adjust the spices to your taste.if you want to make this vegetarian dish then simply Replace chicken and egg with tofu.Yum!!Here is my Version..
Ingredients:
1 - Chicken Breast
2 cups cooked Basmati Rice
1 medium sized Diced Carrot
1/2 cup shredded cabbage
1/2 cup diced green pepper
1/3 cup peas
2 eggs lightly beaten
1 tbsp minced ginger
1 tbsp minced garlic
2-slit green chili
Salt as per needed
1 tsp -Black pepper
1 tsp-White pepper
1 tbsp Dark Soy sauce
1 tsp chili garlic sauce
1 tsp sugar
1 tbsp Rice wine vinegar
2 tbsp green onions/ scallions white and green parts chopped and separated
Preparation:
Boil some water with a tsp of salt and cook the chicken until tender.shred and keep aside.
Heat a wok,add a tbsp of oil,add minced ginger and garlic sauté for few seconds then add shredded cooked chicken sauté for 1 min and add beaten eggs.cook for 3 mins and keep aside.
Clean wok,heat and add a tbsp of oil,add white parts of the chopped scallions,sauté for few seconds then add diced carrots ,green pepper,peas sauté and then add cabbage,slit green chili sauté.
Add salt and black pepper,add the soy sauce,chili garlic sauce and cooked chicken egg mixture.Add the cooked Basmati rice,sugar,Rice wine vinegar and white pepper.check for salt and add if needed.saute for 2 minutes.Remove from heat and garnish with green parts of the scallions.serve and enjoy.

Egg Briyani
Ingredients-1
1 no Onion (finely chopped)
1 no Tomato (diced)
½ tsp Ginger garlic paste
¼ tsp Shah jeera (optional)
¼ tsp Turmeric powder
½ tsp Red chili powder
1 tsp Coriander powder
2 nos Eggs (lightly beaton with 2 pinch salt)
4 tsp Oil / ghee
Ingredients-2
2 cup Basmati rice
1 cup Yogurt/curd
3 cup Water
3 tbsp Milk
3 pinch Saffron
Ingredients-3
3 nos Onion (cut lengthwise)
2 nos Tomato (chopped)
1 tsp Ginger & garlic paste
10 nos Mint leaves
5 stks Coriander leaves
3 nos Bay leaf
3 nos Cloves (karambu)
2 nos Cardamom
1 no Star anise
3 nos Cinnamon stick (small)
2 nos Kapok buds (marathi moggu)
¼ tsp Turmeric
1 tsp Red chili powder
2 tsp Coriander /dhania powder
2 nos Green chili (slit open)
1½ tsp Salt
3 tbsp Oil
2 tsp Ghee
2 tsp Ghee (for drizzling)
½ cup Coriander and mint leaves chopped
4 nos Hard boiled eggs
Method:
Hard boil 4 eggs and make criss-cross slit on one side and keep aside.
Wash and soak basmati rice in (yogurt + water + saffron mixed milk) for 10 to 15 minutes.
To make the scrambled egg curry, break open two eggs and beat slightly with 2 pinch of salt and keep aside.
(From Table -1) Heat 4 tsp oi or ghee in a pan, splutter shah jeera, add finely chopped onions and fry till golden. Add ginger garlic paste and chopped tomatoes along with turmeric, chili powder and coriander powder. Saute for 2 minutes, add the beaton eggs and scramble in the curry. When half done add the slit boiled eggs and stir fry for few seconds and switch off. Keep this aside.
Now take a wide vessel, heat oil and ghee. Add all the whole garam masalas (bay leaf, cinnamon, cloves, cardamom, star anise) along with chopped mint and coriander leaves. Fry for few seconds over medium flame and then add onions. Saute till it gets browned, add ginger garlic paste along with chopped tomatoes. Cook until soft and then add turmeric , red chili powder, corainder powder. Fry the masala till the oil separates.
Now add the soaked rice (with water and yogurt mixture) along with salt. Bring the flame to medium high, place a heavy iron tawa and place the vessel over it. Cover the vessel with tight lid and keep a pan filled with water over it.
Cook for 10 minutes over medium high flame, open and rice should look 70% cooked.
Now add the scrambled egg curry along with the boiled egg over the partially cooked rice.
Bring the flame to "low" without letting the steam outside for 15 to 20 minutes. Rice should be fully cooked by this time, better to check once during last 5 minutes to avoid too much browning on the bottom. When done switch off and let stay covered undisturbed for another 15 minutes. Now open, garnish with chopped coriander leaves and mint leaves. Add a tbsp of ghee, mix gently and serve hot with raita.
Tomato Rice
Ingredients:
2-1/2 cup Basmati rice
1/2 kg Tomato chopped
1-Onion Lengthwise
2 tbsp ginger-garlic paste
4-Beans
2-green chillies slit
1-1/2 red chilli powder
1-tbsp fennel seeds
1/4 cup-coconut milk
1-carrot
1-tsp garam masala powder
turmeric powder
3 tbsp oil
few Curry leaves
few coriander leaves
Method:
Cut all the vegetables.Keep aside.
In a Pressure cooker,add 3 tbsp of oil.Once heated add 1 tbsp fennel seeds and 1 tsp of garam masala powder.Then add onions cut lengthwise and add beans and carrot.fry for a a min.then add slit green chillies,curry leaves and ginger-garlic paste.Saute for 2 mins until raw smell disappers.Add red chilli powder,turmeric powder and chopped tomatoes.cook until tomatoes turns soft and mushy.Add 5 cupps of water and 1/4 cup of coconut milk.Add salt and rice.close the lid and pressure cook until 2 whistles.Once done open and add a tbsp of ghee and garnish with coriander leaves.
Note:if you dont have carrot or beans just use peas.

Veg briyani
There are many ways to prepare vegetable Briyani.This is one delicious and easy way of making it.The taste about this briayani is use of whole spices.Its very simple and elegant.
Ingredients:
Whole spices(9-pepper corns,1-bay leaf,1 tsp-cumin seeds,1tsp-shahi jeera,2-cloves,2-cardamom and 1-cinnamon)
1 cup-Vegetables(carrot,beans,potato and peas)
1 tbsp-ginger garlic paste
1 hanful-mint leaves
1 handful-coriander leaves
few curry leaves
1 tbsp-ghee
1 tbsp-oil
2 cups-Basmati rice
Method:
Soak Basmati rice for atleast 30 mins.set aside
Heat a pan,add a tbsp of ghee and oil.Add the whole spices one by one followed by the curry leaves,coriander and mint.Add the vegetables, saute for 2 mins.
If using rice cooker,transfer the above mixture to the rice cooker along with the soaked bastmati rice.Add water and salt.(for 2 cups of Bastmati rice add 3 & 1/2 cups of water).serve with raita or egg curry.

Egg Fried Rice
Ingredients:
1 cup Bastmati Rice
1 cup chopped vegetables (carrot,beans,cabbage)
1 tsp green chili paste
1 tsp soy sauce
1 tsp vinegar
chopped green onions
salt
ajino moto(optional)
1 tsp minced ginger
1 tsp minced garlic
olive oil or vegetable oil
2 eggs slightly beaten
Method:
Boil rice in a rice cooker using only 2 cups of water for 1 cup of rice.Squeeze 1 Lemon into the water.
After the rice is done.cool and keep aside.
Heat a wok add a tbsp of oil fry the rice for a min.remove to a plate.Then stir fry the eggs separately until done.set aside.
Wipe the wok and put it on a high flame.To the wok add a tbsp of oil.Swirl the oil to coat the pan and add the minced garlic,ginger and spring onions(white part only).
Add the chopped vegetables .saute for like 30 secs then add a tsp of soy sauce,chili sauce and vinegar.Add salt ,ajinomoto and rice.Add the stir fryed eggs and mix.
Saute for a min .garnish with the green part of spring onions.
Remove to a serving dish.

Khan Briyani
Ingredients:
atta dough for sealing the cooking pot
2 cups Basmathi rice
2 bay leaf
1 tsp chilli powder
coriander leaves chopped
1 tbsp coriander powder
1 cup curd
Dry garam masalas
a pinch of food colour
1/2 tsp garamasala powder
1 tbsp ginger garlic paste
1lemon
mint leaves chopped
oil
1 big onion thinly sliced
salt
a pinch -Turmeric powder
Directions
Marinade:
Take a Bowl, Add chilli powder,salt,turmuric,garamasala powder,coriander powder,ginger garlic paste,lemon jucie,oil, mix well and add chicken rub the chicken well with this masalas and pour curd do not mix the curd, keep in fridge for over night.
In a muslin cloth add all the spices and wrap it and keep a side.
Now in a pan add oil then add thinly sliced onions, salt, cook till slight golden brown colour once it is done remove if any execess oil,and also half of the onion.
Boil Rice
Add about 2 tbsp of fried onion oil to the boiling water.Boil rice until 70%done.Drain and keep aside.
Now spread half of the fried onions in the pot and place the marinated chicken, spread it equaly, and put the wraped masala dry,now spread half of the rice,onions,mint,chopped coriander, now spread left over rice,onions,min,coriander leaves.
finely sprinkle colour .Take a chapati dough and make a thread put around the dish and close it with the Lid and put some weight on top of the lid to avoid the steam to escape.
cook for 30 to 45 min.
serve with raita.

Veg Fried Rice
There are many ways of making fried rice.This is my own way of making it and it tastes absolutely awesome.It is very simple,easy,fast and light.This dish has to be done on a very high heat and quick.so get all your ingredients ready before you start cooking.
Ingredients:
1 cup Bastmati Rice

Microwave Chicken Briyani
Ingredients
1/2 kilo chicken
1 medium onion finely chopped
1 medium-large tomato chopped, put in microwave for 1 minute
1 cup yogurt
1 heaped tbsp ginger garlic paste
1/4 tsp haldi/ turmeric powder
1/2 tsp red chilli powder
1 heaped tsp coriander/ daniya powder
Few pieces of assorted garam masala
Zeera
1 heaped tsp of garam masala powder
Tip of tsp of yellow colour powder
Few threads of saffron/zafran
2 cups of basmati rice soaked for half an hour
Half a cup of milk
Oil
For Layering the biryani
1 small tomato chopped
Mint leaves
Few pieces of green chilli
Handful of fried onion
Lemon Wedges
Few drops of kewra essence

Vangi Bhath
Ingredients:
Mustard seeds-1/8 tsp
urad dal-1/2
peanuts-1 tbsp
red chillies-4
onions-1 chopped
curry leaves -few
green chillies-1 slit
brinjal -6
turmeric-1/8 tsp
corainder powder-1 tsp
cumin powder-1 tsp
red chilli powder-1/2 tsp
garam masala-1/2 tsp
salt
grated coconut-t tbsp
bastmati rice-1 cup
oil
lemon juice-1 tsp
Method:
Cook Rice separately and keep aside.
Take a large non-stick skillet put 3 tbsps of oil,add the first seven ingredients and then add the brinjal with some salt.Then add all the powders. Cook till the brinjal becomes tender. Now add 1/2 tsp salt and coconut.close and cook for few min adding little water.Add the cooked rice and mix well. turn off the stove.serve with cucumber raita

Palak or Spinach rice
Ingredients:
Basmati rice-1 cup
spinach leaves-1/2 cup
potatoes cubed-1/4 cup
tomato-1 chopped
onion-thinly sliced
spices-Cardamon,cinnamon,bay leaf(2 each)
cumin seeds-1/2 tsp
red chilli powder-1 tsp
Turmeric powder-1/2 tsp
Garam masala -1/2 tsp
ginger garlic paste-1 tsp
oil or ghee-3 tbsp
salt as needed
Water-2 cups
Method:
- Heat oil or ghee in a vessel or a pressure cooker.
- Add the spices,cumin seeds,onion,ginger-garlic paste annd fry until onions are soft.
- Now add the tomatoes ,spinach and basmati rice and fry for 2 mins.
- Then add the cubed potatoes,chilli powder,turmeric and garam masala.
- Add salt and Water.
- Pressure cook for 2 whistles.
- Garnish with coriander leaves.
- Serve with cucumber raita.
