Chicken Meatball Sandwich


This is an easy to make meatball sandwich using Ground chicken mixed with dried  herbs and breadcrumbs coated with marinara sauce with melted cheese served on a toasted hoagie roll.yum yum yum!!!!


Ingredients:

1/2 lb Ground Chicken
salt & pepper
1/2 cup Bread Crumbs(i used Italian Bread Crumbs)
1 - large egg
1 tsp garlic powder
1 tsp Italian seasoning
1 tsp dried basil
1 tsp rep chili flakes
hoagie rolls
Grated or sliced pepper jack cheese

For the Marinara Sauce:
--------------------------------
2 cup crushed can tomatoes
1 chopped onions
1 tsp minced garlic
1/2 cup chicken or veg stock
1/2 tsp red chili flakes
Salt & Pepper



You can serve this as  spaghetti and meatballs  or on a roll for a sandwich which is my favorite way to have them.

Preparation:

Preheat oven 400 degree F.Line a baking sheet coated with cooking  spray.set aside.
In a bowl,combine ground chicken,egg,bread crumbs,garlic powder,dried herbs,chili flakes,Salt & pepper.Shape into a golf sized meatballs.Arrange them in a cookie sheet with 1 inch apart and a nice drizzle of  EVOO(extra-virgin olive oil).Bake 15-20 mins until cooked through.

For the sauce:

Heat a pan with tbsp of oil.Add the chopped onions and minced garlic and saute  until onions turn soft.

Add a tsp of red chilli  flakes and 2 cups of crushed can tomatoes.Add the stock and simmer for few mintutes until sauce thickens to a desired consistency.At this point check for the seasoning and adjust to taste.

Add the cooked meatballs to the sauce coating well.place the shredded or sliced cheese on top of meatballs and cover for a minute or until the cheese is nice and melted.

Scoop meatballs with melted cheese on a buttered and toasted rolls or melt cheese under broiler.serve.

Makes about 12 meatballs.

Lobster Rolls


Ingredients:

1/2 cup Greek yogurt
3 tablespoons mayonnaise
1 stalk celery, finely chopped
1 tablespoon chopped scallions
1 tablespoon fresh lemon juice
Salt and black pepper
1 tbsp tarragon
1 pound cooked lobster meat
Bread rolls or hot dog buns

Preparation:

Mix the yogurt,mayonnaise, celery, green onions, tarragon, lemon juice, salt and pepper in a mixing bowl.
Add the lobster pieces, stirring to combine.
Cover and refrigerate until ready to serve.
Butter both sides of the rolls and place the filling .serve immediately.

TUNA SANDWICH



This sandwich is perfect for outdoor eating. Its flavor improves when you make it ahead.

Ingredients:

3 tablespoons extra-virgin olive oil
2 tablespoons white-wine vinegar
1 tablespoon Dijon mustard
Coarse salt and ground pepper
2 cans oil-packed tuna (6 ounces each), drained
1/4 English cucumber
1/2 small red onion
8 inch country style round bread loaf
3 tablespoons jarred olive tapenade
1 cup fresh basil leaves
2 hard-cooked large eggs

DIRECTIONS:

In a medium bowl, whisk together olive oil, white-wine vinegar, and Dijon mustard; season with coarse salt and ground pepper.Transfer 2 tablespoons dressing to another bowl; toss with tuna. To remaining dressing, add cucumber and red onion; toss to combine.

Cut an 8-inch country-style round bread loaf in half horizontally; remove most of soft interior bread. Spread 3 tablespoons jarred olive tapenade on bottom half. Top with 1 cup packed fresh basil leaves, then 2 hard-cooked large eggs sliced; season with salt and pepper. Top with tuna, then cucumber mixture, and close sandwich.

Wrap sandwich tightly in plastic and place between two baking sheets. Weight with a heavy skillet. Let stand 1 hour (or refrigerate, up to overnight). To serve, cut into quarters.

Egg Sandwich


Ingredients:
Wheat bread-2 slices
2 Large eggs
Baby Spinach
Pepperjack Cheese-1
Salt & Pepper
Butter

Method:
In a pan heat a Tbsp of butter
Drop 2 large eggs,Flip and take off from heat Immediately.Remove half way through.Dont let the egg sit for long time in the pan.place the cheese on top to melt.
Toast the bread slices and apply mayonaise.
Arrage the bread with omlette ,cheese ,some baby spinach leaves.
Njoy.

Chicken Salad Sandwiches


Ingredients:

3 cups cooked chicken breasts,shredded
1/2 cup of yellow or green onions chopped (opt)
3/4 cup celery , chopped
1/2 cup red grapes , sliced
1/4 cup granny smith apple chopped
1/2 cup walnuts chopped or cashews
3/4 cup mayonnaise
1 tbsp lemon juice
salt and pepper to taste
lettuce leaves
croissants,halved


Directions:

To make the chicked salad , mix the first 8 ingedients and refrigerate overnight.Spread an even amount of chicken salad on each croissant and top with the lettuce leaves and a thin slice of tomato .serve immediately.
Note: you can also use canned tuna instead of chicken.
